Spicy Lime Shrimp
Spicy, Southwestern, Delicious
A simple spicy Lime shrimp perfect for the Smoker, Grill, or even Indoor Smoker pan in the winter time.
Spicy Lime Shrimp
Ingredients
1 lb. Large Shrimp
* Marinade *
1/3 Cup - Jalapeno Slices (the kind in the jar with juice)
1/4 Cup - Pickling Liquid from the Jalapenos
2 - Limes (Juiced)
4 TBSP - Olive Oil
3 TBSP - Fresh Cilantro (Minced)
4 - Green Onions (Sliced)
3 Cloves - Garlic (Minced)
* Mop *
Remaining Marinade (from above)
1/2 Cup - Fish Stock
1 - Lime (juiced)
Directions
Combine the marinade ingredients and Puree in a food processor or blender
Peel and Clean Shrimp and pour marinade over them in shallow dish - cover
Marinade at room temp for 45 minutes
Optional - place shrimp on skewers
Get grill or smoker up to 200 degrees
Drain marinade from shrimp and add mop ingredients in a saucepan
Bring the mop to a boil for 4 min.
Smoke or Grill shrimp over indirect heat, basting occasionally with mop
Shrimp are done when they are opaque and slightly firm.
